Southern Fried Apple Pies

These delicious treats are a southern staple. If you have never had one, be prepared for a treat! They are good hot, cold, with ice cream anytime of day!!

2 cups all purpose flour
1/2 cup shortening
1 teaspoon salt
1/2 cup ice cold water
2 apples peeled and diced ( I use granny smith)
1/3 cup sugar
1/2 teaspoon cinnamon
1 1/2 cup vegetable oil for frying

In medium saucepan cook apples, sugar and cinnamon on low until apples are soft.
Remove from heat and mash with fork until it looks like applesauce. If you prefer you can leave a few chunks.
In separate bowl mix flour and salt, cut in shortening.
Add water and mix until dough comes together to form a ball.
Turn out onto well floured surface.
Roll out to about 1/4 inch thickness.
Cut out a 6 inch circle (may be larger or smaller if you prefer) I use a saucer to trace with
On each circle place spoonful of apples in center of circle.
Dip your finger in water and moisten the edges.
Fold over and seal the edges. Mash edges with tines of fork to seal.
Heat oil over medium high heat and fry each pie until golden brown, turning only once and brown the other side.
Drain on paper towels.
May be sprinkled with powdered sugar while warm or cold.
